Kilbourn Sandwich

This is a fun take on a Monte Cristo. It makes a big batch, so you can stock your freezer and cook up sandwiches whenever you need a quick meal. —Dan Seering, Verona, Wisconsin

Ingredients

  • 1-1/4 pounds sliced deli turkey
  • 1-1/4 pounds sliced deli ham
  • 10 slices Swiss cheese
  • 20 slices white bread
  • 4 cups complete buttermilk pancake mix
  • Oil for deep-fat frying
  • Confectioners' sugar
  • 1 cup sour cream
  • 1/2 cup strawberry preserves

Directions

  • Place turkey, ham and cheese on 10 bread slices; top with remaining bread. Cut each sandwich diagonally in half.
  • Prepare pancake mix according to package directions. Dip sandwiches in pancake batter, allowing excess to drip off. Freeze sandwiches on waxed paper-lined baking sheets until firm. Transfer to freezer containers; return to freezer.
  • To use, in an electric skillet or deep-fat fryer, heat oil to 375°. Fry sandwiches, a few at a time, until golden brown, 3-4 minutes on each side. Drain on paper towels; sprinkle with confectioners' sugar. Combine sour cream and preserves; serve with sandwiches.
