How to Make Strawberry Cake Mix Cookies

While cookies are a simple treat, sometimes baking a batch can feel like a lot of work. Not with this shortcut! Did you know you can make a batch of cookies using cake mix as the base?

With a boxed strawberry cake mix, oil and eggs, you can whip up soft, chewy cookies in minutes. And with such a stunning pink hue, these colorful strawberry cake mix cookies are perfect for any occasion, whether you’re mixing them up for a baby shower, Valentine’s Day or after-school snack.

How to Make Strawberry Cookies with Cake Mix

Ingredients

  • 1 box (15.25 ounces) strawberry cake mix
  • 1/3 cup vegetable oil
  • 2 eggs

Molly’s Tip: You can add rainbow sprinkles for even more color!

Tools You’ll Need

  • Mixing Bowl: A wide, deep mixing bowl will make the process of mixing the dough easy.
  • Balloon Whisk: Whisking the cake mix before adding the rest of the ingredients will ensure the cookie dough is smooth.
  • Cookie Sheet: Bake your cookies on a flat cookie sheet for best results.

Directions

Step 1: Whisk the cake mix

Preheat the oven to 350°F. Line a cookie sheet with parchment paper to prevent sticking.

Pour the strawberry cake mix into a mixing bowl and whisk it until smooth. This will prevent any clumps in the cookies.

Step 2: Finish the dough

Add the vegetable oil and eggs, and stir until the dough forms. For best results, chill the dough for 15 minutes. (This is why it’s so important to chill cookie dough.)

Step 3: Bake the cookies

Use a cookie scoop to divide the chilled dough into small balls. Roll the dough in your hands, slightly flatten each ball and place on the prepared baking sheet. Top with sprinkles if desired.

Bake the cookies for 10 minutes. Remove the cookies from the oven and allow them to rest on the stovetop for 5 minutes. Then transfer the cookies to a cooling rack to cool completely.

I was certainly skeptical about using only three ingredients. I also thought the flavor of the strawberry cake mix might come through as totally artificial. I was wrong!

If you’re looking for a quick and easy cookie recipe, this will pleasantly surprise you. You’ll only need one bowl to pull it off, and the cookies bake in no time. The end result is a chewy cookie with a soft center and just a hint of strawberry flavor. There’s no artificial taste, and the texture is absolutely perfect. It’s hard to stop after eating one!

How to Make This Recipe Your Own

Once the cookies are baked, they’ll end up with a lovely pink hue. I added rainbow sprinkles to my cookies for an additional pop of color, but they can be left out if preferred. Other options to dress up these pretty pink cookies include adding white chocolate chips or milk chocolate chips to the mix. Rolling each ball of dough in powdered sugar before baking will result in strawberry crinkle cookies. You could even dip the baked cookies in melted chocolate to mimic chocolate-covered strawberries. The options are endless!
