Ingredients

  • 1 can (20 ounces) crushed pineapple, undrained
  • 1 package (3.4 ounces) instant vanilla pudding mix
  • 1 teaspoon coconut rum or rum extract
  • 2 cups miniature marshmallows
  • 1 cup sweetened shredded coconut, toasted
  • 1/2 cup finely chopped pistachios, toasted
  • 1 carton (8 ounces) frozen whipped topping, thawed

Directions

  1. In a large bowl, combine pineapple, pudding mix and rum. Add marshmallows, coconut and pistachios. Fold in whipped topping. Chill until serving.
