Amish Macaroni Salad

Ingredients

  • 2 cups uncooked elbow macaroni
  • 2 cups Miracle Whip or mayonnaise
  • 3/4 cup sugar
  • 3 tablespoons sweet pickle relish
  • 3 tablespoons yellow mustard
  • 2-1/4 teaspoons cider vinegar
  • 3/4 teaspoon celery seed
  • 1/4 teaspoon salt
  • 3 celery ribs, chopped
  • 1 medium onion, finely chopped
  • 1 medium sweet red pepper, chopped
  • 3 hard-boiled large eggs, chopped

Directions

  1. Cook macaroni according to package directions; drain and rinse with cold water. Cool completely.
  2. For dressing, in a small bowl, combine Miracle Whip, sugar, relish, mustard, vinegar, celery seed and salt. In a large bowl, combine macaroni, celery, onion, red pepper and eggs. Add dressing; gently toss to coat. Cover and refrigerate until serving.
