How to Make Ted Lasso’s Biscuit Recipe

Ted Lasso, played by Jason Sudeikis, stormed into our hearts when the eponymous show first premiered in 2020 on Apple TV+. Now two seasons in, Ted’s quirky personality and infectious charm continue to reel us in. Another thing that’s caught our attention? The Ted Lasso biscuit recipe.

One of Ted’s heartwarming traits is treating his boss Rebecca Welton (played by Hannah Waddingham) to a daily pink box of shortbread biscuits as a way to get to know his new colleague. (Biscuit is the British term for cookie). While Rebecca desperately tries to find out where he’s getting the apparently delicious and addicting biscuits, we later find out that Ted’s been baking the biscuits himself the whole time.

Now you can re-create the “biscuits with the boss” experience in your own home! Ted Lasso’s biscuit recipe is most similar to a Scottish shortbread recipe, with just a few simple additions. This is a buttery shortbread, so don’t skimp on the good stuff. Use a European-style butter with at least 82% butterfat.

Copycat Ted Lasso Biscuit Recipe

Ingredients

  • 2 sticks (8 ounces) unsalted butter, softened
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon coarse salt

Directions

Step 1: Prepare the pan

Lightly butter the bottom and sides of a 9-by-9 in. metal baking dish. (Here’s how to know when to use a metal versus glass baking dish).

Step 2: Cream together the butter and sugar

Use an electric mixer to beat the butter until pale yellow in color. Add the sugar on low speed to start, then beat until light and fluffy. Beat in the vanilla extract.

Step 3: Whisk the flour and salt

In a small bowl, whisk together the flour and salt.

Step 4: Combine the wet and dry ingredients

At low speed, add the flour mixture and stir until just combined.

Step 5: Press the dough into the pan

Turn the dough out into the prepared baking pan and use a spatula to pat the dough into an even 1/2-inch layer. Chill in the refrigerator for at least 30 minutes or up to overnight.

Step 6: Bake the biscuits

Preheat the oven to 300°F. Use a knife to score the dough into two-inch rectangles. Use a fork to prick a pattern onto the top of each rectangle. Bake for 40-45 minutes, or until golden brown and firm in the center.

Step 7: Slice and cool

Use a sharp knife to slice through the baked biscuits while still warm to ensure they are completely separated, and then let cool completely. For an extra authentic experience, serve your biscuits in a pink box, just like Ted Lasso would.
