Vodka. Butter. Two words you don’t necessarily think of in the same phrase. But thanks to TikTok food creator Carolina Gelen, vodka butter has become the next buttery internet sensation, rivaling the inventive butter candle and tasty cowbody butter. It’s also a new element to add to the wildly popular butter board.

What Is Vodka Butter?

It’s as straightforward as it sounds—butter blended with vodka. You add a shot of vodka to a stick of softened butter and mix it together in a food processor or blender until you have a silky smooth spread, with added bite.

I experimented with other spirits as well, and found that both gin and aquavit (basically a Scandinavian version of gin that uses carraway instead of juniper) bring some lovely spices and herbs to the mix.

How Do You Use Vodka Butter?

It’s the perfect addition to a snack board. Gelen recommends spreading it on a toasted baguette and topping it with salty anchovies. Tinned fish of all kinds has gotten really popular, but it’s not for everyone. So I experimented with other salty toppings and found that sliced pickles, capers and olives work really well, too.

Beyond boards, Gelen recommends using it as the butter element in a vodka sauce for pasta, or in her unique, delicious beans alla vodka recipe.

How to Make Vodka Butter

Vodka Butter By Jason Wilson

Ingredients

  • 2 sticks of butter (softened, room temperature)
  • 3 ounces vodka (or another spirit)
  • Fresh bread, such as baguette or dark rye
  • Pickles, capers, anchovy fillets, tinned fish or other toppings
  • Fresh lemon zest
  • Freshly ground black pepper

Directions

Step 1: Whiz the butter and booze

In a food processor or blender, combine the softened butter and vodka. Pulse the mixture until the vodka is fully integrated, taking care to scrape the sides as you go.

Step 2: Prepare the other components

Toast the bread and open the anchovies, pickles, capers or whatever salty accompaniment you’re serving with the spread. Arrange on a board or serving platter.

Step 3: Pile and snack

Slather the vodka butter on the toasted bread, and pile it with the salty topping of choice. Top with some grated lemon zest and fresh ground black pepper.
