We Made the Viral Lasagna Soup Everyone Is Obsessed With

Sometimes recipes go viral for the craziest reasons. Take lasagna soup, for example. Recipes for lasagna soup have been floating around the internet for a couple of years now, including versions for your slow cooker. But just a few weeks ago, lasagna soup took its star turn, thanks to R&B singer SZA and TikToker @dannylovespasta.

In a stunning example of “celebrities… they’re just like us,” SZA happened to be watching @dannylovespasta’s Instagram post of him eating lasagna soup. The Grammy-winning star commented: “RECIPE PLEASE KING.” What was Danny to do, but make a new tutorial video showing SZA (and the rest of us) how to make the dish.

What Is Lasagna Soup?

Lasagna soup is a one-pot dish with all the basic ingredients you use to make lasagna but without the traditional (and more time-consuming) form. The onions, seasoning, meat, sauce, cheese and even the pasta noodles are all cooked together. Therefore, the whole thing comes together so much faster than traditional lasagna.

This recipe can be tweaked according to your taste. I like to season it with dried oregano, but feel free to experiment with other spices or even red pepper flakes. Other recipes use ricotta cheese instead of the heavy cream used here.

Also, pro tip: you’ll want to break up the large lasagna noodles before boiling, but the pieces should still be larger than a typical short pasta shape. For the marinara sauce, you can make your own or use a good store brand. Lasagna soup is also perfect for leftovers, or even as a make-ahead dish. Just reheat whatever you don’t use. Or, you can cook up a whole pot to enjoy throughout the week.

Ingredients

  • Olive oil
  • 1 yellow onion, chopped
  • 2 cloves of garlic, minced
  • 1/2 pound ground beef
  • 1/2 pound Italian sausage
  • Pinch of oregano (or other spices)
  • 2 tablespoons tomato paste
  • 2 cups marinara sauce
  • 3 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 box of lasagna noodles
  • 1/2 cup parmesan cheese
  • 1 cup mozzarella cheese
  • 1/4 cup fresh basil, chopped

Directions

Step 1: Sauté the onions and meat

Heat the oil in a pot or deep skillet over medium heat, add chopped onions and sauté for 5-7 minutes. Add garlic, ground beef, sausage, salt and pepper, along with any seasoning you want (I used a healthy pinch of oregano). Cook for another 5-7 minutes, until the meat is browned.

Step 2: Add in the sauce components

To the same pot, add the tomato paste, marinara sauce, chicken broth and heavy cream. Stir and bring to a boil.

Step 3: Add the pasta

Break the lasagna noodles into medium-sized pieces and add to the boiling pot. Stir occasionally and let cook for around 10 minutes, or until the noodles become al dente.

Step 4: Mix in the cheeses and serve

Once the pasta is al dente, add in your parmesan and mozzarella cheeses and stir. The consistency should be cheesy and gooey. Serve in bowls, topped with fresh basil.
