How to Make Chicken Ramen

We’ve all had days where nothing satisfies more than a quick and brothy bowl of instant ramen. But there are also times when you might want a more substantial meal. This is where this recipe comes into play.

You can make this chicken ramen recipe your own by adjusting the flavors to your tastes or your family’s. Making homemade ramen may require a little patience, but this shortcut version can come together on even the busiest weeknight.

How to Make Chicken Ramen

This quick chicken ramen makes four servings.

Ingredients

Chicken

  • 2 tablespoons canola oil
  • 2 boneless skinless chicken breast halves (6 ounces each)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon soy sauce
  • 1 teaspoon brown sugar

Noodles

  • 1 tablespoon canola oil
  • 2 teaspoons sesame oil
  • 1 cup sliced fresh shiitake mushrooms
  • 3 garlic cloves, minced
  • 1 teaspoon minced fresh gingerroot
  • 2 tablespoons mirin (sweet rice wine)
  • 6 cups chicken broth
  • 2 tablespoons soy sauce
  • 2 cups coarsely chopped bok choy
  • 3 packages (3 ounces each) ramen noodles

Toppings

  • 4 soft-cooked large eggs, peeled and halved
  • 4 green onions, thinly sliced
  • 4 teaspoons sesame seeds

Directions

Step 1: Preheat the oven

Preheat oven to 375°F.

Step 2: Brown the chicken

In a small oven-proof skillet, heat oil over medium heat. Sprinkle chicken with salt and pepper. Brown chicken, 2-3 minutes on each side.

Step 3: Bake the chicken

Combine soy sauce and brown sugar; brush over chicken. Transfer skillet to oven. Bake until a thermometer reads 165°, 15-20 minutes.

Step 4: Prepare the broth

Meanwhile, in a large saucepan, heat canola and sesame oils over medium heat.

Add mushrooms; cook and stir until tender, 3-5 minutes. Add garlic and ginger; cook and stir 1 minute longer. Stir in broth, soy sauce and mirin; bring to a boil.

Reduce heat; cover and simmer 10 minutes. Add bok choy. Cook, uncovered, for 5 minutes.

Step 5: Add the noodles

Add noodles. Discard seasoning packets or save for another use.

Cook, uncovered, until noodles are tender, 5-7 minutes. Cut chicken into slices.

Step 6: Serve

To serve, add noodles, mushrooms and bok choy from saucepan to 4 individual serving bowls. Ladle desired amount of broth over noodles. Add sliced chicken and toppings.

What toppings can you put on chicken ramen?

For chicken ramen, we recommend soft-cooked eggs, green onions and sesame seeds for toppings. Not a fan of soft-boiled eggs? No problem! Learn how to cook eggs to your preferred level of doneness, then add them here, instead.

Other toppings can really elevate your ramen. Nori or dried seaweed adds a nice crunch to ramen. Kamaboko, or steamed fish cake, adds a hint of fishy flavor.

Garlic, corn and bean sprouts are vegetarian toppings that add a lot of flavor and texture to the ramen without taking anything away from it.

How can you make chicken ramen spicy?

To make your chicken ramen spicy, try adding sriracha! Start with a small amount and build on it depending on your tolerance.

You can also add red pepper flakes or gochujang, which is a spicy Korean paste made with red chili peppers.

What else can you add to chicken ramen?

You can add sauces to ramen to take it to the next level. These include miso paste, fish sauce or a curry paste. Lemon or lime juice can also brighten any ramen!

You can even add additional spices to change the flavor. While pepper or chili flakes will make your ramen spicier, a cinnamon stick will make it sweeter.
