The recipe was developed by TikTok creator @butt.erhand and has over 12 million likes. It calls for the surprising addition of roasted shallots, miso and red pepper flakes, and is deceptively simple. The result is a subtle and delicious rendition with more complex flavors than simply a blast of garlic.

How to Make This Cheesy Garlic Bread Recipe

The trick to this is roasting the garlic and shallots so that they are well caramelized and squeeze out easily. I used larger-than-normal shallots, which didn’t caramelize as quickly as the garlic, so you can roast the two in separate foil. Make sure your butter is softened. I also found it easier to give the garlic-shallot-butter mixture a whiz in the food processor. You can use whatever cheese you have on hand, but I found that fresh mozzarella and grated Parmesan were perfect.

Ingredients

  • Loaf of Italian bread
  • 3 shallots
  • 2 garlic bulbs
  • Olive oil
  • Salt and pepper
  • 8 tablespoons butter, softened
  • 1 tablespoon miso
  • 1/2 tablespoon red pepper flakes
  • Mix of mozzarella and parmesan cheese
  • Parsley, chopped
  • Drizzle of honey

Directions

Step 1: Roast the garlic and shallots

Cut the tops off the garlic bulbs and shallots. Place on aluminum foil, and toss with a generous amount of olive oil, salt and pepper. Wrap with the foil and place in oven at 350°F for 1 hour (or maybe a little more) until the garlic and shallots are golden and caramelized. Let cool.

Step 2: Make the garlic butter

In a bowl, squeeze out the caramelized garlic and shallots. Add butter, miso, red pepper flakes, salt and pepper, and mix well. I ended up giving the mixture a whiz in the food processor.

Step 3: Spread and sprinkle the bread

Slice the loaf of bread in half (or quarters) and spread the garlic-shallot-butter mixture evenly on the broad. On top, sprinkle a generous amount of cheese. Place in the oven at 350 degrees for 15 minutes. Finish in the broiler for a minute or two for a golden brown and crunchy top, keeping a close eye on it so it doesn’t burn.

Step 4: Drizzle and Serve

Top your garlic bread with a drizzle of honey and chopped parsley. Slice and serve.
