- 1 medium butternut squash (2 to 2-1/2 pounds), peeled and cut into 1-in. cubes
- 2 to 2-1/2 pounds large sweet potatoes, peeled and cut into 1-in. cubes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 3/4 teaspoon dried thyme
- 1/2 teaspoon pepper
- 1 cup crumbled Gorgonzola cheese
- 1 cup chopped pecans, toasted
- 3/4 cup dried cranberries
- 1/4 cup chopped fresh parsley
