This cloud cake is made by combining applesauce and unflavored gelatin, resulting in a moist, jiggly cake with just a hint of sweetness and strawberry flavor that’s perfect for summertime. The ingredients are simple, and you won’t have to turn on the oven. And better yet, it serves as the ideal vessel to pair with whipped cream and fresh berries for a refreshingly cool treat.
Strawberry Cloud Cake Recipe
This cloud cake recipe relies on plain, unsweetened applesauce as a base, with the addition of strawberry applesauce for sweetness, flavor and color. The gelatin is unflavored, so it won’t impact the flavor at all. The cake serves 8, but could easily be doubled for a larger crowd.
Ingredients
- 1 ½ cups strawberry applesauce
- 1 ½ cups unsweetened applesauce
- 2 tablespoons gelatin powder
Directions
Step 1: Dissolve the gelatin
Set up a double boiler on the stovetop on low heat. Pour all the applesauce into the top bowl and sprinkle the gelatin powder on top. Whisk to combine. Continue to whisk the mixture occasionally as it becomes warm and slightly chunky.
Step 2: Whip the mixture
Transfer the mixture to the bowl of a stand mixer fitted with the whisk attachment, or use a hand mixer with the same bowl. Whip the mixture on high speed for 8-10 minutes until it becomes pale and creamy. Very soft peaks will form.
Step 3: Pour and set
Pour the whipped mixture into a 7-by-11-inch glass pan. Smooth the top with a spatula and place the cloud cake in the fridge to set for at least two hours. Once set, enjoy the cake on its own or slice and top with whipped cream and strawberries.
How to Make This Cloud Cake Your Own
This cloud cake was made using a mixture of no sugar added applesauce and strawberry applesauce for a nice strawberry flavor. However, it’s certainly possible to switch up the flavor.
An apple cloud cake could be made with unsweetened applesauce only, or even cinnamon applesauce for a unique kick. The strawberry applesauce could also be replaced with other flavors of applesauce such as cherry, blueberry, mixed berry or even mango peach.
The ideal topping for this cloud cake is whipped cream, but you could certainly choose another topping. Consider drizzling it with a fresh strawberry sauce, or even pairing it with a dollop of lemon curd.
