Inspired by a green goddess dressing made popular on TikTok by Melissa Ben-Ishay, creator of Baked by Melissa, Yumna got to work making her own version—including a salad to pair with the tangy dressing.

Ingredients

  • 1/2 head green cabbage
  • 3 Persian cucumbers
  • 1 bunch green onions
  • Tortilla chips, for serving
Dressing:
  • 1 cup baby spinach
  • 1 cup fresh basil
  • 2 garlic cloves
  • 1 small shallot
  • Juice of 2 lemons
  • 1/4 cup olive oil
  • 1/4 cup cashews
  • 1/3 cup grated Parmesan cheese
  • 2 tablespoons rice vinegar
  • 1 teaspoon salt

Editor’s Tip: If you want to make the green goddess dressing vegan, use nutritional yeast instead of grated Parmesan.

Directions

Step 1: Chop your veggies

Chop up the cabbage, the Persian cucumbers and the green onions. You’ll want to chop your vegetables as small as possible. Remember, the salad is almost like a chunky green dip, so it should be easy to scoop with your tortilla chips.

Toss the chopped veggies into a large mixing bowl and set aside.

Step 2: Make the dressing

Blend up the ingredients for the dressing. Pour the dressing over the chopped veggies in a large bowl and mix until everything is combined. Once mixed, open up a bag of tortilla chips and snack away!
