Preheat air fryer to 400°. In a large bowl, toss zucchini, garlic, oil and salt. Arrange zucchini in a single layer on tray in air-fryer basket. Cook until tender and golden brown, 7-10 minutes.
Meanwhile, in a small saucepan, bring vinegar to a boil. Reduce heat and simmer until reduced by half. Place zucchini in a serving bowl; drizzle with vinegar. Toss to coat.

If you’re a big lemon lover, drizzle your air-fryer zucchini with lemon juice instead of the reduced balsamic vinegar. You could also toss some of your favorite seasonings with the zucchini before you put the slices in the air fryer.
