Preheat oven to 400°. In a large bowl, combine the first 9 ingredients. Add chicken; mix lightly but thoroughly. Shape into 1-1/2-in. balls. Place meatballs on a greased rack in a 15x10x1-in. baking pan. Bake until cooked through, 20-25 minutes. If desired, top with additional chopped fresh parsley.

You have lots of options. If you have an air fryer, go ahead and grab that. Drop in the chicken meatballs and cook at 375°F for about 15 minutes, or until cooked through. You can also cook them in a skillet over medium-high heat. A fun idea that will give you a slightly smoky flavor is to grill them. Pop them on a greased grill rack over medium-high heat.

Chicken meatball hoagies are a fun twist. Simply place the cooked meatballs in a hoagie bun, top with heated marinara sauce and some mozzarella, and broil for a minute. All you have to do is place the cooled, cooked meatballs on a baking sheet and place in the freezer. After an hour, transfer the partially frozen meatballs to an airtight freezer container. They can stay frozen for up to 6 months.
